Chicken Enchilada Casserole

General Description

Serves 8- 10 people


1 Large Chicken, Seasoned, Boiled, & De boned
1/2 C Margarine
1 Large Onion, Chopped
1 (13 oz) Can Evaporated Milk
1 (10 oz) Can Cream Mushroom Soup
1 (10 oz) Can Cream Chicken Soup
1 (12 oz) Can of Rotel(Tomato & Chilies
)1 (12oz) Package Corn Tortillas
2 Cups Shredded Cheddar Cheese

Cooking Instructions

In a pot saute' onions in margarine, add milk, soups,
and rotel. Place a layer of tortillas in the bottom of
a greased 9x14 inch casserole dish. Add a layer of
chicken, soup mix, and cheese. Repeat process ending
with cheese. Bake at 350 degrees for 25 -30 minutes


This dish can be frozen before cooking
