Eggplant Parmigiana

General Description


1 eggplant
1 can Italian breadcrumbs
1 egg
Parmesan cheese
mozzarella cheese

Cooking Instructions

Slice eggplant into thin slices (about 1/4 in).
-Soak in water (if you want to ;).
-Make one bowl with egg/ milk mixture (equal parts).
-Make one bowl with breadcrumbs/ Parmesan mixture (MOSTLY bread crumbs).
-Dip eggplant into egg mixture & then into breadcrumb mixture (repeat process if you want).
-Fry until golden brown (I like mine crispier).
-Top with spaghetti sauce & mozzarella cheese.
