Red Beans And Rice

General Description


1 lb dry red beans (kidney)
1 lb Hot Smoke Sausage (or whatever kind you can find/like)
3 tablespoons of Parsley Flakes
1 teaspoon of Thyme
1 teaspoon of Sweet Basil (reg. basil is fine also)
2 Bay Leaves
1 Large onion ( chopped)
8 toes of garlic ( chopped)
1 sm-med ham hock
(or any other kind of meat you might want to use)
1/8 teaspoon of Tony Chachere's (Creole Seasoning)
-tony's is awesome but any kind of cajun/creole will do
7 cups of water

Cooking Instructions

Sautee onions/garlic (about 5 minutes)
put in meat and cook (about 5 minutes)
add beans let steam for a while
add thyme, basil, parsley & bay leaves
add water
Cook for 2 - 2 1/2 Hours at a simmer



If you double the recipe… start off with a little less water. You can always add some. Some people like to soak the beans over night. It really isnt necessary… the will soften. You only need one pot! (unless you typically burn stuff)…

If you are prone to burning… cook onions/garlic and meat in separate pan… then throw it all in the pot!

And just make however much rice you need at the end.

For sausage I use Hillshire farms regular smoked sausage..
