Rum Pecan Sweet Potato Boats

General Description


Ingredients

4 medium sweet potatoes; skin pierced
1/2 cup milk
2 tbsp butter
1/8 tsp salt & pepper
1 tsp cinnamon
1 tbsp light brown sugar
2 tbsp rum (I like vanilla or spiced)
1/4 cup chopped pecans


Cooking Instructions

Place potatoes in circle in microwave and heat 6 minutes at a time until fork tender. Let stand about 10 minutes. Cut potatoes in half lenghtwise and scoop pulp into bowl. Mash well and stir in the remaining ingredients. Spoon back into skins. Microwave 2-5 minutes until heated through.
